Pizza Sauce

Do you make your own pizza, and you want that great "pizzeria" taste in your sauce, but can't figure out how to do it? How long to cook it? What herbs?

After rolling out dough, ladle on sauce until it feels about right, then grab a handful of sugar and drizzle it on, again until it feels right. The surface of the sauce should not be white, but it should be possible to see the crystals dissolving.

The sugar covers the taste of the acidity and vegetal character of the sauce. Sugar and olive oil are the secret to a great pizza.

Common Modifications

E.V.O.O.

Drizzle high-quality Extra Virgin Olive Oil onto sauce on pizza, or pre-brush the dough with EVOO before adding the sauce.

No Cook Pizza Sauce

Procedure

Add tomato paste, water, and oil into container. Add garlic, basil, and oregano mixing thoroughly. Add salt and pepper to taste. A quart mason jar works perfectly, ingredients can be added and shaken to mix. For best results place in refrigerator overnight or allow the mixture to rest before using. Makes ~1/2 quart.
